Last year’s launch of the 1971 Piper-Heidsieck Hors-Série was the first iteration of a new collection aimed at giving Piper-Heidsieck’s new winemaker Émilien Boutillat carte blanche to produce something outside the box from within Piper’s long-hidden treasure trove of Champagnes. That 50-year-old Réserve du chef de cave would be a hard act to follow. In London this autumn to introduce the second iteration, Émilien reminded us of the freedom he’d been given to come up with a limited edition of something extraordinary from the Piper Oenothèque. The brief was that it had to be striking in some special way, whether related to length of ageing, an unusual blend or a particular tasting ritual.
The 1982 Piper-Heidsieck Hors-Série is released after being disgorged in January this year, having spent 40 years in the cellar on its lees.
What he ended up choosing was something both outside (and inside) the box. 1982 had been a voluminous vintage that followed a warm, dry season, reaching a good ripeness level at around 9.5% potential alcohol before fermentation. Not only was it a big vintage though, it was a high quality vintage too, good enough in fact for Piper to stash away a substantial number of bottles in the cellar for future enjoyment. The unusual thing about this however was that because of the ripeness of the fruit, Piper dosed the wine with a mere 4 grams per litre of sugar contrary to the conventional practice of the time requiring at least double that amount, if not more.
The wine, Sauvage de Heidsieck, was an Extra Brut which was the ancestor of today’s Essentiel Extra Brut. The name derives from a conversation between François d’Aulan, erstwhile owner of Piper-Heidsieck, and Claude Terrail, owner of the renowned Parisian restaurant La Tour d’Argent. Talking wine and food pairing, Claude Terrail had said how much he appreciated freshness and salinity in Champagne and what a great match the style made with his gastronomy. Following his comments, Piper-Heidsieck decided to create a dry vintage Champagne giving it an Extra Brut dosage and calling it, on disgorgement, Brut Sauvage. The first vintage, the 1979, was disgorged with no dosage, but that was changed to 4 grams per litre for the 1982 vintage.
