There salty air hits the island with such frequency and force that trees cant take root. The mills malting barley consists of tightly pressed Scottish heather due to the lack of peat wood burned for smoking. Strong peat provides the harmonious balance between sweetness and smokiness that characterizes Highland Park Scotch. It is unfiltered to ensure that the whiskeys natural flavor and color are preserved in each drum. Most of us enjoy this whiskey straight despite its excellent 1266 proof. Others dilute it with a little water and make it two parts as intended by the manufacturer.
